March 10-12, 2024 is the annual Seafood Expo North America (SENA) and we at Channel Fish couldn’t be more excited! This conference is where top seafood industry experts can share their wisdom with retailers, while fish processors can showcase new products and gain important insight.
Gearing Up for the New Product Showcase
This year is particularly monumental, as for the first time Channel Fish decided to participate in the New Product Showcase. We submitted three new items carefully created by our R&D team: Caesar Crouton Scallops, Sweet Heat Cornmeal Crunch North Atlantic Pollock, and Superfood Salmon Tenders. To our delight, the Sweet Heat Cornmeal Crunch North Atlantic Pollock was selected as one of the eleven finalists.
This is a major accomplishment, as this annual competition recognizes leadership in seafood product development in North America. Finalists will compete for two awards: Best New Foodservice Product and Best New Retail Product. The products that made the finals, including our Sweet Heat Cornmeal Crunch North Atlantic Pollock, were selected from a pool of 70 entries into the exposition’s New Product Showcase.
The winners will be selected by a panel of three seafood industry experts. These experts will base their judgments on a number of criteria, including uniqueness and appropriateness to the market, taste, packaging, nutritional value, and originality.
New Product Showcase Submissions
Caesar Crouton Scallops
Our R&D team drew upon its love of seafood and extensive previous experience in restaurant dining to imagine a way to improve upon a classic Caesar salad by adding a seafood twist.
Sweet Heat North Atlantic Pollock
This item combines a delicious, sweet corn elote breading and batter with a honey sriracha predust to create the perfect blend of sweetness and heat. It’s no surprise that it was selected as a finalist for the 2024 Seafood Excellence Awards.
Superfood Salmon Tenders
Enhanced the nutrition of salmon by designing a coating system packed with ancient grains.
Raw Materials
When creating our newest products, we carefully considered the raw materials that would go into them. We selected fan favorite scallops, affordable North Atlantic Pollock, and nutrient-dense salmon. This gave us a great variety of options to showcase to industry experts and potential consumers alike.
R&D
A lot of R&D went into our new products, with our team working hard to create delicious products we can be proud of for the New Product Showcase. We wanted to show off the health benefits, versatility, and affordability of different types of fish.
Because taste is important to us, and one of the factors finalists will be judged on, we wanted to make sure we were submitting products we’d be happy to eat. The whole team tasted and evaluated the New Product Showcase items.
Meanwhile, local business owner Marc of MB Graphics worked with our product vision to create the packaging mock-ups for the contest.
Finally, Mia, the graphic designer for the project, proudly added her design to the final draft of the packaging.
