The onset of cool fall weather means comfort food, crock pot recipes and casseroles. Fish casseroles are some of our favorite foods when the weather changes. Casseroles can be cooked in advance and saved for nights when the kids have lots of homework or the school events get to be too much. Here is a great fish recipe for casserole that can use your favorite fish, either frozen or fresh and lots of your harvested veggies as side dishes. Enjoy. pic8mCgPh

 

Ingredients (6 Servings)
1 cup sour cream
2 tablespoons butter
2 tablespoons lemon juice
1 – 1 1/2 lb of firm white fish fillet (halibut, or cod work well)
salt
pepper
1/2 medium onion, thinly sliced and separated into rings
1 -1 1/2 cup grated cheddar cheese

 

Directions

  • Preheat oven to 350 degrees.
  • Melt butter and blend in the lemon juice and sour cream.
  • Salt and pepper the fish to taste and place in a casserole dish.
  • Spread the onion rings evenly on top.
  • Pour the sour cream mixture over fish, spread evenly and top with the cheese.
  • Bake for 35 minutes or until fish flakes with a fork.
