Here is what you’ll need:
– 1 ½ pounds of monkfish fillet (chop into 2 in. pieces)
– 3 cups of spinach
– 1 cup cherry tomatoes
– Small red potatoes
– 4 cups chicken broth
– 1 cup white wine
– ¼ cup thin onion slices
– 1 minced garlic clove
– ¼ teaspoon salt
– ¼ teaspoon ground black pepper
– ¼ teaspoon saffron threads
Here is how to make it:
Begin by steaming the potatoes until fully cooked. While that is cooking, place a skillet over medium-high heat and add the tomatoes, broth, wine, onions and garlic. Let the concoction cook for 25 minutes. After the time has passed, add the salt, pepper and saffron to the skillet and let it cook for 2 more minutes. Once your monkfish fillet has been chopped into pieces and the 2 minutes have passed, add the fish to the pan in single layer process, and let it cook for 8 minutes in medium heat. One the time has passed and the fish has become flaky, the fish has been completed! Serve with baby spinach and potatoes and enjoy!
